It's fairly basic chili, but it works for me.

Ingredients: (I don't use measurements. When I make chili, I wing it and season to taste. I like it spicy and I usually make a big batch.)

Lean Ground Beef
Garlic, minced
Sweet Onion, diced
Green Pepper, diced
Red Pepper, diced
Mushrooms, sliced
Diced Tomato
Tomato Paste
Red Kidney Beans
White Kidney Beans
Chili Powder
Cayenne Pepper
Black Pepper


Brown beef with garlic.
Add cumin and chili powder.
Add salt and pepper.
Add green and red peppers, and onions. (The trick here is to undercook them slightly.)
Add diced tomatoes.
Mix ingredients, add cayenne pepper.
Simmer on low heat for 30 minutes.
Add tomato paste to thicken.
Add kidney beans.
Simmer on low heat for an hour.
Take off heat and let sit over night.

You can add some corn to it if you want. I've done it once, but I find it's a little much.

You can also substitute the ground beef with ground bison, which is a lean meat. Very tasty, but some find it dry.


Serve with grated Cheddar and Monterey Jack, a dab of Sour Cream and some French Baguette. Voilą!

You know what it is? Chili is one of those recipes that you just have to KNOW how to do. And I DON"T know how to do it!! I can follow this recipe, but I'm an idgit at it. You have to have that special mojo and "get" it to make it and I just don't have it. I'll keep trying though. I'll try this recipe and maybe I'll learn then. Thanks, Awndray for sharing. You obviously have that magic touch and I'm jealous. :p
