View Full Version : Maple Smoked & Glazed Wild Turkey

Ingredients
10-14 Lb. Wild Turkey
3/4 cup real maple syrup
1 tablespoon white wine vinegar
1/2 teaspoon mustard powder
4 Macintosh or Empire Apples

Directions
1. Halve Apples and stuff into turkey cavity
2. Place Turkey in smoker and begin smoking with Maple chips maintaining a temp of 250 degrees
3. Whisk together the maple syrup, vinegar and dry mustard.
4. Brush on glaze and continue to brush as the turkey smokes, remember to glaze as fast as possible to maintain smoker heat
5. Continue glazing every 45 minutes, approximate smoking time is 6-8 hours
6. Remove apples and carve, serves 8

Nope... I let the apples keep it moist and I run a water tray in my smoker....

I've always used the adage "if you are looking your aren't cooking" when smoking. My smoker is very large and doesn't rebound fast enough to be opening it up all the time. Have you tried brinning your birds?
