Bacon Bomb

1lb of bacon
1lb of sausage meat
BBQ sauce of your choice.
BBQ rub of your choice.


Take one pound of bacon, weave a lattice 6 pieces wide, and 6 pieces wide, no gaps in between the slices, brush with BBQ sauce and sprinkle with BBQ rub. Fry the remainder of the pound. when finished frying, crumble into a container. Place the sausage meat on top of your lattice, flatten out to completely cover the lattice, again, brush with BBQ sauce, and sprinkle with rub. take your crumbled bacon, and place down the center of the sausage meat in a row. Roll the whole works up like a jelly roll, brush with BBQ sauce, and sprinkle with rub, cook in oven at 350F for one hour per inch of thickness. When done, remove, glaze with BBQ sauce, slice and serve.

Its very rich, but awesome. you can BBQ it as well, but not on direct heat. The grease will cause the bacon to burn. I find the best sauce to use is one with brown sugar or molasses in it. Ie Kraft brown sugar BBQ sauce type thing. The sweetness adds a lot to it.



CJ's Bannock

Ingredients

3 cups all-purpose flour
1 teaspoon salt
2 tablespoons baking powder
1/4 cup butter, melted
1 1/2 cups water



Measure flour, salt, and baking powder into a large bowl. Stir to mix. Pour melted butter and water over flour mixture. Stir with fork to make a ball.
Turn dough out on a lightly floured surface, and knead gently about 10 times. Pat into a flat circle 3/4 to 1 inch thick.
Cook in a greased frying pan over medium heat, allowing about 15 minutes for each side. Use two lifters for easy turning. May also be baked on a greased baking sheet at 350 degrees F (175 degrees C) for 25 to 30 minutes. Can also be cooked on the barbie with low heat, just keep an eye on it.

You can spice this one up by adding leftover bacon, cheese, etc.

My wife loves turtles, I so have to find a recipe for those, just to see the look on her face when I open the BBQ up....
