A moose muffle or mouffle or moufle is the nose and the pendulous, overhanging upper lip of the moose.

Recipe:

Cut the nose from the moose.
Wash the nose thoroughly with water.
Take one or two noses of moose and put them in 4 cups of boiling water.
Drop in two fair sized onions cut in quarters.
Add salt (1/2tsp) and pepper (1/4tsp)
Gently boil for 30 minutes or so.
Add 1/2 cup sliced carrots.
Add 1/2 cup sliced celery.
Simmer for another 20 minutes or until vegetables are tender.

Remove the moose moufle and serve the soup - very delicious.

Also the cooked mouse moufle can be thinly sliced and served as part of the meal.

Note:
Moose Muffle is not recommended for trophy hunters as it louses up the head for mounting and taxidermists are dead set against Moose Muffle.

Interesting. Probably some pretty good flavor in the moufle - I would have never thought to try it!
