It's hard to find a good chicken sandwich in town, so I had to make my own.

I pretty much made this up as I went but this is close enough.

Boneless skinless chicken thighs.

Marinade:

2 cups butter milk
1/2 ts Kosher salt
1/2 ts fresh ground black pepper
1 Tb smoked paprika
1/2 ts cayenne pepper

Toss your thighs in the marinade and put in the fridge for 24 hours (2 days is better).

Dredge:

2 cups whole wheat flour
1 ts Kosher salt
1 ts fresh ground black pepper
1 ts garlic powder
1 ts onion power
1 ts cayenne pepper
1 Tb smoked paprika
1 Tb demerara suger
1 ts baking powder

Sauce:

1 1/2 cup of greek yogurt
2 Tb minced dill pickle
1 Tb minced onion
1/2 ts garlic powder
1/2 ts onion powder
1/2 ts smoked paprika
1 ts honey
1 Tb sriracha

Let the sauce sit in the fridge overnight.


Once you are ready to cook heat your canola oil to 370f
Shake off excess buttermilk and dredge your chicken in the flour mix. Press each side to coat well and place on a wire rack.
Cook chicken till internal temp is 170f and golden brown on the outside.

While your chicken is cooking butter the inside of your rolls and fry them in pan till crisp and a little browned.

Now assemble from the ground up; bun, sauce, lettuce, chicken, sauce, tomato.
