Seeing as how around here if I don't cook, I don't eat, I like to keep things simple, relatively quick and delicious. So here's a very easy recipe for chicken thighs. I usually make 6 - 8 thighs so I have a lunch for tomorrow at work.
Ingredients:
- 6 - 8 boneless, skinless chicken thighs
- 1 cup Bull's Eye BBQ sauce
- 1 cup Smuckers Apricot jam
- 1 Tablespoon Soy Sauce
- Rice
Prep:
Preheat oven to 375F. Place chicken thighs in a glass casserole dish.
In a separate bowl, mix together BBQ sauce, jam and soy sauce. Try to get it smooth, not chunky. Proceed to pour mixture over top of chicken thighs. Ensure a deep, thick coating.
Toss that into the oven for 45 minutes or so. When done, pull out and let rest for 5 minutes.
Try to time cooking your rice so that it and the chicken are done nearly at the same time. I cheat and use Minute Rice, since i like quick and easy. 1 cup rice, 1 cup water, 7 minutes in the microwave. If you're steaming or boiling your rice, time yourself accordingly.
Add a side of some kind and a cold beer. Call 'er good.
Tonight's side is Caesar salad and the choice of beer is a Granville Island Brewing Brockton India Pale Ale.
