Smoked some lake trout last night. Too salty again. Next time 1 cup of water 1 teaspoon of sea salt and 2 tablespoons of brown sugar. This goes in a bag for 2 hours with a 5lb lake trout filet. Smoked using 2 pans of chips and fried to finish cooking. Other 5lb lake trout fillet will be cooked with butter, salt and pepper. No more smoking lake trout.
