So a friend DMAY told me how to do this and I finally tried it. Pork chops or loin chops smoked. Not as good as his but Oh what a treat. Like mini hams. 3 pans of Alder smoke in a Big Chief smoker. Overnight in cure, salt and brown sugar. Yummy. +6 here today.
