My brine is done in a 5 gallon food bucket. Warm water for easier mixing - 1 cup kosher salt / 1 cup brown sugar / 3/4 cup soy sauce / 1/3 cup olive oil some crushed garlic to taste. If it's pork I'll toss in a 1/3 bottle of cheap navy rum that works wonders... Trow in a pile of ice cubes after it's all mixed up and into the fridge. Large roasts can go 36hrs, pig 24hrs, poultry 8-10hrs.
After the roast hits room temp on the counter, I rub it down with olive oil and then brush on some worcestershire / hp & crushed garlic and then on the smoker.
Keeps for 7-10 days easy, but we slice it all after it rests nice and thin and vacuum seal & freeze the excess......

ROFL, y'all are too kind.... had my elderly folks over for lunch. Got them off that damn orchard for a bit.....

It'd last about 4 or 5 days at my house(where sharing is communism). Just got 6 out of a 9ish pound pork shoulder. I'll get 6 out of 24 chicken legs.
