    Who's for salsa?

    35 pounds of roma tomatoes,,, the riper the better

    8 green peppers

    8 sweet onions

    2 to 3 pounds (less or more) hot peppers GOAST / Schoch bonnet / some Habaneros

    10 pounds of any sweet variety of apples NORLANDS if you can find them

    process tomatoes and apples in a food processor,, chop onions, and peppers

    you'll need a large pot,, 40 liter,, bring it to a boil,,, then simmer for 2 hours

    can,,, let sit in a cool dark corner for a month,,,

    makes about 25 liters,,, wash 30 bottles in case

    I've been making it for years. My recipe is similar. I dont use apples in mine, but I do use corn.

    Mom knows someone, that we just buy it from... I got a case of it in the basement. Chunky, not to watery, good flavor, and not too spicy.

    And when done, we clean the jars and use them to replace our drinking jars.

    I like corn and black beans in mine.
    And I really like how the house smells while you're making it.
    Why does the rest of the country get first dibbs on half my income?

    Not much to tell.
    Add some black beans.
    I usually use canned ones, but if you planned ahead I'm sure dried would be good too.
    I like the taste of it, and it helps bulk up your quantity for not much $$.

    I have my Mexican connection Gilberto makes mine. Two breakfast tacos every morning and a jar of this delicious salsa every week. Beautiful deep, rich taste with a subtle after burn once you stop chewing. My favourite ever for complex tasty taste...... I think he knows that this stuff anchors his position in the craft force for as long as the project goes.
