    I found it quite good and it was popular. The tail has the tenderloins and is the whiter meat, very mild and absorbed mostly the bacon flavour and smoke. The back legs where a more brown meat, little more chew with almost a wild bird taste combined with the bacon and smoke.....
    I’d love to be able to throw one on the smoker in BC when friends come over, the reactions would be priceless.

    So I presume most of the body is skinned out under the bacon?
