    deer shanks ?

When I shoot a dry doe this fall I want to try a stew using the deer shanks . Any good tips?
    I've down loaded Steve Rinella's and Sossy's recipe....sounds so good .
Actually want to make a Borsht using late season beets , potatoes etc. from the garden with slow cooked shanks instead of pork hocks .

Rinella's recipe is good. I prefer Hank Shaw's.

Michael Hunter (aka The Hunter Chef) probably has something in his book. I just received it last week., so I haven't any of his recipes yet.

Thanks awndray ...I like Hank Shaw's braised venison shank recipe....wow 40 garlic cloves ....now to just get a nice corn fed dry doe ...
Counted 22 deer on my son's hay field yesterday evening....sometimes see up to 40 + at one time...no big bucks though

I think any decent Osso Buco recipe could be adapted to work well with a leaner deer shank.

Saw about a hundred whitetail on the hour long drive to the farm. Mom and Dad had a dozen in the front yard earlier today. Should be a good season.
