    Beer Can Chicken

    OK... For anyone who has had this you all know how good it can be.... here is my variation...

    -Ingredients-

    1 Grade a fryer size chicken
    1 TBSP coarse salt
    1/2 TBSP fresh grouind pepper
    1/2 TBSP Poultry seasoning
    Lemon juice

    1 can beer as follows:

    Flaky meat light taste - Light or blonde beer
    Heavy taste, less flaky - Amber to dark ale
    Best of bot hworlds - Average storebought lager ie. Busch....


    -Instructions-

    -Douse chicken liberally in lemon juice while it sits in a glass casserole
    -Over a period of one hour keep chicken in casserole with lemon juice, rotating it periodically to keep all surfaces moist
    -Combine spices in a bowl and mix thoroughly, if you have a pestle you can grind to finer consistancy
    -Rub surface of chicken with spice mix, don't be afraid to be liberal, much of teh spices drain off as the chicken cooks
    -Place chicken on stand with beer inserted
    -Place in preheated oven cooking at a temperature of 325 for 2 hours or BBQ low and slow until well browned....


    The result should be a well browned chicken... the meat will be extremely tender and flaky... serve with sauce of your choice (I like Swiss Chalet)

    That looks really tasty - I'm surprised I haven't made this before.

    Would it be sacrilegious to make beer can grouse or pheasant?

    Not at all... although you may have to get one of those small beer cans like they use one trains and plains for a grouse.....lol

    None of our chickens are small enough to fit in a BBQ like that.

    You can also tie up the legs and really ram the can up its butt to make it fit.
    Makes for really good eats.

    Looks awesome. I really need to do this. I used to do it on a BBQ, but i don't have one now. Maybe in the oven...

    I know this is sacriledge among men but I prefer the oven... It ensures the bird cooks perfectly all around and better control with no hot spots... Buy the stand for ten bucks at cdn tire well worth it...
