    Old cheddar cheese

    I bought a brick of old cheddar cheese 3 years ago (according to the best before date) and threw it in the deep freezer downstairs. Well....I forgot about it. Mrs BSD was cleaning things out and found it. Oh man...I need to buy 50 more and do the same thing. Super tangy and crumbly...not overly dried out but more dry than normal. Soooo goood !!!!

    Looks good - the sharper the better.
    Nothing will F--k you up as much as the realization that there's no real reason the alphabet needs to be in order !!

    I put 2-year Balderson white and Balderson medium cheddar cheese into the chest freezer two years ago. I don't know about tangy, but frozen cheese is certainly crumbly. I couldn't cut a slice and hold it in my hand; I had to have a bowl or put it on top of something 'structural'.

    Looks good ,I heard from a person that they like to buy cheese and leave it wrapped on top of their fridge ,just sitting warm for 3 months. Experiment underway, I'm at 2 months now, no mold ,they must irradiate this shit or something nowadays. we shall see.

    I tried some Red Leicester cheese a few years ago, if you like sharp crumbly cheese you should try it out if you never have.
    It's delicious, I should try freezing some for couple years to see if gets better.

    Locally, 2-year Balderson white cheese comes in two different kinds of packaging.
    1. factory vacuum sealed, tight to the cheese. I think Balderson does this themselves before shipping. Expiry date is usually about 1.5 years from now. I've found the plastic wrap to be difficult to get access to the cheese, but the long expiry date (which really gives no mold for at least several months) is worth it.
    2. store vacuum sealed, with a lot more plastic. I think the store cuts these from a large block of cheese, and packages it themselves. Expiry date is usually 2 or 3 months from now, but even if I check for mold in the store I find mold appears within a week or two in my home fridge. I do like the lose plastic wrap though, once open I can slide the cheese out of the plastic which makes shredding easy.


    My cheese stays in my fridge. Once opened, it's put into a ziploc bag.

    We have mozzarella in the deep freeze from 3 years ago. Shredded for pizza though.
    Will have to buy a block and freeze it.

    Never tried to freeze cheese, as it typically doesn't last very long around here.

    Used to be many more small cheese houses around. My fav for the past quarter century has been Maple Dale.
    (8M53+6Q Plainfield, Belleville, ON)
    They rock. You can get 2,3,5,8,10 and some years,12 yo cheeses from them if you want.

    Nearby Ivanhoe (9GRG+WX Madoc, Ontario) is also not too shabby.
    They have better distribution so you may have seen some of theirs in your local store.
